Ingredients

    1 package of soba noodles
    3-4 tbsp organic unsalted peanut butter
    1/2 bag broccoli coleslaw mix
    1/2 can of coconut milk
    1.5-2 tbsp chili garlic sauce
    1/2 cup bean sprouts
    1 tbsp sesame oil
    1/4 cup sesame seeds
    3 stalks lemon grass
    2 tbsp lite soy sauce
    1 lime
    4-5 pieces of fresh ginger
    1 cup of scallions chopped
    1-2 tsp rice vinegar

Directions

prepare soba noodles according to directions on package.
put coconut milk, ginger, and lemon grass in a pot on stove and heat on medium low for 20 minutes
mix peanut butter, chili garlic sauce, sesame oil, soy sauce,rice vinegar, and lime juice together in a bowl.
remove lemon grass and ginger from the coconut milk and pour half of the milk into the peanut butter mixture.
mix together well. depending on the consistency you would like you may want to add more milk. it should not be too runny.
taste to see if sugar is needed. if so, add sugar.
pour this mixture over soba noodles.
add broccoli slaw and bean sprouts and gently fold until well incorporated.
top with sesame seeds and scallions.

you can also add cilantro if you like it.

makes 12 1-cup servings
