Ingredients

    1 1/2 c flour
    1 1/2 tsp baking powder
    1/4 tsp salt
    2 T sugar
    1 1/2 c skim milk
    1 egg
    2 T unsalted butter, melted and cooled

Directions

Stir together dry ingredients
Beat egg into milk
Add melted butter
Combine wet and dry ingredients, stir until just mixed.
Pour into preheated skillet or griddle
Cook 2-3 minutes, flip, cook until golden.
Makes 22 3 inch pancakes
