Introduction

Number of Servings: 12

Ingredients

    4 large eggs
    1/4 cup nonfat milk
    3/4 cup diced ham
    1/4 cup diced onion
    1/4 cup green pepper
    4 oz can of mushrooms
    2 oz shredded cheese
    12 6" flour tortillas
    Salsa, optional

Directions

Spray a large nonstick skillet with cooking spray. Saute ham, onions, peppers and mushrooms until tender. Beat eggs and milk together in bowl; pour into skillet. Stir and scramble the egg mixture until cooked. Meanwhile, heat tortillas in microwave. Spoon mixture between 12 tortillas, top with shredded cheese. Roll into burritos. Wrap in wax paper, and put into a freezer bag. Freeze. To use: heat in microwave until egg mixture is heated through and cheese is melted. Top with salsa if desired.

    I'm new around here, but why/how does this recipe equal 12 servings? - 4/3/09

    I had the 6" flour tortillas in the calculations, but not in the actual recipe. My bad! Anyway, if you use flour tortillas, the nutritional content is correct. If you use corn or wheat, there will be a small variance.

    Incredible!
    I made them yesterday, to have for my breakfast at work for the coming week (i need something quick and portable). and they are delicous!! the only downfall is that its hard to eat just one!! This is a great recipe for those of on the go!!! - 2/9/09
