Introduction

This is a delicious African recipe given to me by a friend from an African cookbook. Will keep for a month (at least) in the fridge. Requires olive oil and bread for dipping. Ingredients

    1 cup sesame seeds
    1/3 cup shelled, skinned hazelnuts (or almonds)
    1/3 cup coriander seeds
    1/8 cup ground cumin
    1 tsp dried thyme
    1 tsp salt
    1/2 tsp freshly ground black pepper
    Bread and Olive Oil, to serve

Directions

Heat a large heavy skillet over a medium heat. Add the sesame seeds and roast, stirring, until they are light golden brown. Set aside to cool.

Add the hazelnuts to the pan and roast, stirring until lightly and evenly browned. Set aside to cool. Add the coriander seeds to the pan and roast until they begin to pop. Set aside to cool. Place the sesame seeds, hazelnuts, coriander seeds, cumin, thyme, salt and pepper in a food processer or blender and process into a course powder. To serve, dip bread into olive oil and then Dukkah.

Makes about 45 servings of a few tablespoons each. This will vary by how soon your guests can stop eating :)
