Introduction

Ingredients

    1 T flaxseeds, to be ground & whipped with 3 T water (or 1 egg's worth other egg replacer)
    2 C whole wheat pastry flour
    2 t baking powder
    1 T granulated sugar
    1/2 t baking soda
    1/2 t salt
    1 C soy milk (calorie count assumes unsweetened Silk brand)

Directions

Preheat the oven to 400 degrees and lightly spray a cooking sheet with non-stick spray.

If making this in the food processor, add the tablespoon of flaxseeds and grind until fine. Add 3 T water and whip.

Meanwhile, sift together the flour, baking powder, sugar, baking soda, and salt. Add the dry ingredients to the "egg" in the processor and pulse a few times to evenly distribute the ingredients. Add the milk and process until just combined--don't over-mix.

You can also do this by hand by whipping together ground flaxseeds with water and dripping evenly into the dry ingredients, mixing by hand to distribute. Add the milk and mix until just combined.

Drop by heaping spoonfuls onto cookie sheet--makes 12 biscuits--and bake for 8-10 minutes or until golden brown.
