Introduction

With these pancakes you can make up the dry mix (I ususally double it) and keep it in the fridge and make it up only when needed. Ingredients

    2 1/2 cups whole wheat pastry flour (or whole wheat flour)
    1/2 cup buttermilk powder
    1/2 cup ground flaxseed
    1 tbsp baking powder
    2 tsp baking soda

    To use your dry mix:
    1)Measure the desired # of cups of dry mix in a bowl
    2) add 1/4 cup egg substitute or 1 egg for each cup of mix
    3) add 1 1/2 tbsp canola oil for each cup of mix
    4)add 1/2 tsp of vanilla extract for each cup of mix
    5) add 2/3 cup of water for each cup of mix (add a little more if you like the batter a little thinner)
