Introduction

This is a yummy "mexican" pasta style casserole. My kids Love it! This can be a fast and easy meal if you ground your meat before hand and freeze it. This is a yummy "mexican" pasta style casserole. My kids Love it! This can be a fast and easy meal if you ground your meat before hand and freeze it.

Ingredients

    -About 11 oz of extra lean ground beef, turkey or chicken
    -1/2 cup diced onion
    -1 can of low sodium diced tomatoes
    -1 can of regular diced tomatoes
    -2 small cans of tomato sauce
    -1/2 package of taco seasoning (or add more to taste)
    -6 oz of colby jack cheese
    -14 oz Ronzoni healthy harvest spiral pasta

Directions

Ground beef. Cook noodles. Combine together in large pan or pot. Add all other ingredients except cheese and mix together. Then add cheese on top and melt. Serve and enjoy!

Makes about 7, 1 3/4 cup servings
