Introduction

I revised my mother's banana bread recipe that has been around forever and made it low fat, more healthy, and extra yummy! I revised my mother's banana bread recipe that has been around forever and made it low fat, more healthy, and extra yummy!
Number of Servings: 18

Ingredients

    3 bananas (old, brown ones work best)
    1 egg
    1 egg white
    2 cups flour
    1/2 cup sugar
    1/4 cup brown sugar
    1/2 cup applesauce, unsweetened
    1 tbsp. oil
    1 tsp. vanilla
    1 tsp. baking soda
    a pinch of salt

Directions

Heat oven to 350 degrees.

Mix all ingredients in a bowl with a mixer till well blended.

Spoon into muffin tin, about 3/4 full. Cook muffins for 20 minutes or until nothing sticks when poked with a toothpick.

(Have not tried with this recipe yet, but) For a loaf pan, coat pan with cooking spray and cook 45 min to 1 hour until middle is cooked through.
