Ingredients

    5 whole wheat tortillas
    cooking spray
    2 lbs ground turkey
    1/4 c taco seasoning
    3/4 c water
    1 12oz can fat free refried beans
    1/4 c butter
    1/4 c flour
    2 c fat free half and half
    16 oz shredded sharp cheddar cheese
    2 c shredded lettuce
    1 medium chopped tomato
    5 chopped green onions


Directions

Heat oven to 400 degrees. Cut tortillas into strips. Spray with cooking spray and bake until golden brown. Set aside, but do not turn off oven. Brown ground turkey, add taco seasoning and water. Reduce heat and simmer until thickened. Place meat in the bottom of a 13x9 inch pan. Spread refried bean on top of ground turkey. In a sauce pan melt butter. Stir in flour. Add half and half and bring to a slow boil. Stir in cheese until completely melted. Pour sauce over beans. Bake 10 minutes. Cover with baked tortilla strips. Add lettuce, tomato and green onion. Serve with sour cream and salsa!!

    O.K.
    There were WAY too many green onions, and once they were served, hard to pick out! It does not say how thin to cut the strips- and since they are whole wheat, hard to tell when "golden". Overall, it was alright, but it served very sloppy. More effort than tasted. - 7/29/10

    This was good, but not great. My daughter suggested adding black olives, which I thought sounded like a good idea. - 6/25/09
