Ingredients

    For Lentil Stew:

    3 c low sodium chicken broth
    1 c lentils
    1/2 c quinoa
    1 oz whole wheat spaghetti broken into 1 1/2 inch peices
    1 small onion sliced

    For Spicy Tomato Sauce:

    1 t olive oil
    3 cloves garlic, finely chopped
    1 t sea salt
    2 cups crushed tomatoes
    1/2 t red bell pepepr crushed
    3 T red wine vinegar
    1/2 t cumin
    1/4 t pepper

Directions

Lentil Stew: Heat stock and 3 cups of water in a saucepan over medium high ehat. Add lentils, lower heat and cover. After 25 minutes, add quinoa, and cook for additional 6 minutes. Then add spaghetti and cook for 6 to 8 minutes.

While lentils are cooking, heat oil in pan and add onions. cook for 20 minutes until onions begins to brown.

SPicy Tomato Sauce: Heat oil and add garlic and salt. Stir in tomatoes, pepper. Add vinegar, cumin adn pepper. Cook for 20 minutes.

Prepare shawarma if desired. Assemble by placing 1 cup lentil stew in a bowl with 1/4 c tomato sauce and 2 oz chilcken shawarma and 1 T onions.

    Very Good
    this was awesome! great base, I added mushrooms, celery, extra onion & garlic; substituted brown rice for whole wheat spaghetti since I didn't have the spaghetti & it is yummy! also it makes multiple servings so I can pack for lunches for the rest of the week - 4/13/11
