Introduction

Ingredients

14 oz Beef Smoked Sausage, 8-10 medium sized potatoes, 1 large onion, rosemary, thyme, salt & pepper, carrot matchsticks [optional]
Directions
Slice the sausage into circles about 1/8th of an inch thick. In your soup crock, saute the sausage until it gets browned and the fat renders. At this point, drain off about half of the fat. This brings the calorie count lower than the calorie count on the recipe indicates.
Dice the onion and saute with the sausage and fat until soft.
Clean and cut potatoes [with or without skins] into inch size cubes. Add potatoes to the pot. If you are adding carrot matchsticks, do so now.
Add about 1 tsp Rosemary and 1 tsp Thyme [or to taste]. I sometimes add a dried basil leaf as well.
Add 4-6 cups of water and put on stove at high heat. Keep at high heat until the soup hits a rolling boil. Allow to boil for 20 minutes. Reduce heat and simmer until potatoes are tender.
If broth does not seem flavorful enough, keep on heat and reduce broth further. Salt and pepper to taste and allow to rest for 10 mins. Serve hot.
