Ingredients

    1 package (10 ounces) shredded cabbage
    2 carrots, shredded
    1 red or yellow pepper, sliced thinly
    2 scallions, chopped
    2 tablespoons olive oil
    2 tablespoons soy sauce
    1 tablespoon white vinegar
    1/3 cup Splenda No Calorie Sweetner
    1/2 teaspoon of rice wine vinegar
    Dash of Sesame oil (optional)

Directions

At the bottom of a large bowl, whisk together soy sauce, white vinegar, splenda, and rice wine vinegar. Slowly stream olive oil into the soy sauce mixture, making sure to emulsify the oil.

Add vegetables to the bowl and mix to combine. Refrigerate at least 30 minutes to combine flavors.
