Introduction
I was unable to calculate the nutritional value of the marinate. I've been told to add "1 weight watcher point" to a serving (1/2 cup). For those of you not doing weight watchers, I'd add 60 calories for the oil and sugar. If anyone knows how to calculate marinate, please let me know!!! Ingredients

1 can Pinto Beans (15 oz)
I can Black Eyed Peas (15 oz)
1 can White Shoepeg Corn (11 oz)
4 oz jar diced Pimentos
2 cups finely chopped Bell Peppers (red, green, yellow)
2 cups finely chopped Celery
1 small Onion finely chopped
Marinate:
1 teaspoon Salt
1/2 teaspoon Pepper
1 Tablespoon Water
3/4 cup Cider Vinegar
1/2 cup Salad Oil
1 cup Sugar
Directions
This recipe makes approximately 15 half cup servings.
In saucepan mix marinate ingredients and stir until brought to boil.
Let the marinate cool then pour over the remaining ingredients.
Mix well, cover, and refrigerate for 24 hours. Drain and serve. Can be kept up to 2 months in the refrigerator.
