Introduction

Flavorful stuffed mushrooms with a hint of tangy goat cheese. I used a whole package of ground turkey, I often find recipes call for just a pound which leaves you with a little bit extra. Ingredients

    19.2 oz Package of 93% Lean Ground Turkey
    2 oz Silver Goat Original Goat Cheese
    10 oz Frozen Spinach (thawed, excess water removed)
    1 Medium Green Onion (finely diced)
    20 Large Mushrooms (fresh)
    1.5 tbsp. Panko Bread Crumbs
    Salt & Pepper (to your taste)

Directions

Preheat oven to 350

Mix the first four ingredients well, making sure to fully incorporate the goat cheese, along with salt and pepper.

Clean the mushrooms, discard the stems then place them on a baking tray lined with parchment paper.

Evenly distribute the stuffing into the mushrooms, they will be filled generously. Sprinkle with breadcrumbs.

Bake for 35 minutes, or until the internal temperature reaches 165°F and no longer pink.
