Introduction

This is a low carb Chicken "Casserole" dish. Mayo and cheese hold chicken, peppers and spinach together like a casserole. Very savory! A real comfort food. I make it in small dishes for lunch or snack. Double or triple ingredients to make a family size dish. This is a low carb Chicken "Casserole" dish. Ingredients

    Chicken Breast, no skin, 6 ounces
    Spinach, fresh, 1 cup
    Peppers, sweet, red, roasted diced, .5 cup
    Kraft Mayo Light Mayonnaise (Mayo), 1 tbsp
    Parmesan Cheese, grated, 2 tbsp
    Mozzarella Cheese, part skim milk, 1 oz
    Dried Basil 1 tsp

Directions

Mix chopped cooked chicken breast with diced peppers, basil and chopped spinach. Add parmesan cheese and Mayo and mix well. Put in 2 individual sized casserole dishes and sprinkle with mozzarella cheese. Place on a baking sheet in a 350 degree oven for 15 to 20 minutes. (Depends on if you start with cold or hot chicken)

Want a larger carrerole double or triple ingredents and cook in a 9 inch casserole dish.
