Ingredients

3 Boneless, Skinless chicken breasts
3-4 eggs
2 cups flour
Oil (vegetable)
1 small can of pineapple chunks
1 small can sliced water chestnuts
3/4 cups Rice Vinegar
4 tbsp ketchup
4 tbsp brown sugar
1 tsp soy sauce
2 tsp corn starch
4 tsp water
Directions
Cut chicken breast into bite size pieces place into a bowl of cold water. Once chicken is wet place in bowl of flour and cover completely. Pull out pieces and cover with egg (whisk together the eggs in a bowl) once covered in egg recover in flour.
Heat oil in a skillet until a drop of water sizzles and evaporates. Cook chicken in skillet until a golden brown color. Set aside.
In a Sauce pan combine rice vinegar, ketchup, brown sugar, and soy sauce over medium heat.
Mix together in a small bowl 2 tsp corn starch and 4 tsp water. Add to the sauce pan whisking constantly. Cook until it starts to thicken (do not boil)
Place chicken in a 9x13 dish add pineapple chunks (drained) and sliced water chestnuts(drained) Pour sauce over everything and place in the oven at 350 for 45 minutes.
