Ingredients

    3 ripe bananas, mashed
    1 c brown sugar
    1 egg (or 3.5 tbsp egg white substitute)
    1 tsp vanilla
    1/3 c applesauce (or 1/2 c oil)
    2 c whole wheat flour
    1 c rolled oats
    1/2 tsp cinnamon
    1/2 tsp ginger
    1 tbsp baking powder
    1/2 tsp baking soda

Directions

Preheat oven to 350. Line muffin pans or coat with cooking spray.
In a large bowl, stir together the bananas, brown sugar, egg, vanilla and applesauce. In a separate bowl, combine the whole wheat flour, oats, cinnamon, ginger, baking powder & soda; stir into the banana mixture until blended. Spoon the batter into the prepared muffin pans.
Bake for approx 25 mins, until the tops spring back when lightly pressed.
