Introduction

One of my favorites!! This recipe is very versatile. I used what I had on hand. Grapes or almonds can be added but be sure to add them to the nutritional values. Ingredients

    1/2 of whole roasted chicken (1 breast, 1 leg quarter)
    1/2 c of mayonnaise
    1 lg Granny Smith apple
    2/3 c of pecans
    1 tsp soy sauce, light
    1 tsp curry powder
    1 tsp Tastefully Simple Spinach & Herb Mix - optional

Directions

Cook chicken til done. Debone and remove skin. Chop chicken, apple, pineapple, and nuts in food processor til you get to the consistency you like. (I chopped them one at a time.) Then add mayonnaise, soy sauce, curry powder, and herb mix. Stir ingredients together. Serve as sandwich or with crackers. Feel free to use lowfat ingredients to help cut calories. Rough estimate: makes 8 half cup servings.
