Great, great great! Originally in the Pittsburgh Post Gazette as Dungeness Crab Bisque...I used canned crab, add a little sugar to the crab. Great, great great! Originally in the Pittsburgh Post Gazette as Dungeness Crab Bisque...I used canned crab, add a little sugar to the crab.

Ingredients

    2T butter
    3 T chopped onion or scallions
    2 T flour
    1/2 t paprika
    1/4 C tomato paste
    2 C Chicken broth
    16 oz. can crab meat or 2 Dungeness Crabs-cooked, cracked and meat harvested, add 1T sugar to it
    2 cups half and half or heavy whipping cream

Directions

sautee onion in butter, add flour and mix until bubbly. Add paprika and mix in. Keep at a bubble, then add tomato paste and whisk in. Then add chicken broth - still keep bubbling. Finally add crab mixture and half and half (can use whole whipping cream too). Cook 5-7 minutes longer on medium heat, keep stirring until heated through nicely. I add a little sugar to the crab meat - optional. The original recipie was with Dungeness Crab - which is nice and sweet.

    Absolutely delicious, quick, and simple! Tastes very gourmet. I add some imitation crab, as that adds some sweetness. Everytime I make it, there are never leftovers. - 12/2/10
