Introduction

OK its totally not as bad as it sounds. its your basic bean burger, but with tuna for extra protein. you can easily leave it out. Ingredients

    1 can black beans, rinsed and dried.
    1 can red kidney beans, rinsed and dried.
    1/2 can sweet corn, rinsed and dried
    1.25 cups crushed fiber one
    1/4 cup chopped onion of choice
    .25 cup chopped bell peppers
    .25 cup garlic, diced
    4 egg whites
    half an egg yolk
    2 cans drained tuna
    2 large red potatoes, steamed and mashed.
    various seasonings ( i used curry powder, cayenne, burger salt, and pepper)


Directions

First, cube your potatoes and boil till soft enough to mash. While thats boiling, take your beans and drain-- lay out on paper towels and pat dry. do the same to the corn-- add to a large bowl. add your fiber one, onions, bell peppers, and garlic. drain your tuna WELL, add to bowl. throw whatever seasonings you want in there too! Try to season as much as possible before adding eggs so you can taste it. Mash potatoes and add to mixture. put all eggs into mixture and mix with hands. should be sticky enough to form patties! divide out into large patties..... i made about 7 with this mixture. Either fry them immediately or freeze and bbq.


I love mine layered with honey mustard, lettuce, tomatoe, avocado, and balsalmic vinegar on top-- but no bun :-)
