Ingredients

    1 lb. cooked great northern beans (retain cooking water)
    1/2 lb. salt pork, cubed
    1/2 c. brown sugar
    2 t. dry mustard
    1 t. ginger
    1 t. salt
    1 small onion, finely chopped
    1 c. dark molasses

Directions

Cook beans, and retain cooking water. Cube salt pork and divide into two equal portions. Mix remaining ingredients in small bowl. Layer half the beans, half the pork, and half the mixture in a medium sized bean pot. Add the second half of the beans, pork, and mixture, then add enough bean water to cover. Put on lid, and cook 6-8 hours at 250*, stirring every hour. Serve with Boston Brown Bread for a complete protein.

    Five Stars...I'm using Crock Pot. Dark Karo for molasses. If neither on hand, extra dark brown sugar with a bit more water will work. I left out the ginger as we don't like it and used fresh black pepper. Next time I will make brown bread to accompany it. - 7/4/09
