Introduction

I devised this to use up ham scraps from Easter Ham. It is yummy and good for sandwiches or on crackers. I devised this to use up ham scraps from Easter Ham. It is yummy and good for sandwiches or on crackers.
Number of Servings: 4

Ingredients

    2 cups leftover ham
    1 stalk of celery, chopped
2 gherkin sweet pickles, cut up
    2 tablespoons mayonaise

Directions

Put all ingredients into food processor. Process until blended well and ham is chopped finely.

Use for sandwiches or on crackers. I have mine wrapped in crisp lettuce leaves.

(I calculated for 4 servings, but can be more according to how you are serving it. I judged 1/4 cup per serving. If using lite mayo, would be less calories.)

Enjoy

I didn't have any mayo on hand, so used 1/3 cup non-fat plain greek yogurt. Excellent! - 4/1/13
