Ingredients

    1 cup corn, fresh or frozen
    1 cup tomatoes, seeded and diced
    1 can drained and rinsed black beans
    ½ cup green onions sliced
    2 Tablespoons fresh cilantro chopped very fine
    1 T olive oil
    2 Tablespoons FRESH lime juice
    1 teaspoon ground cumin (spice)
    ½ teaspoon salt
    ½ finely diced and seeded jalapeno
    pinch of pepper



Directions

Mix all together and refrigerate for a couple of hours or overnight. Serve with tortilla chips. Especially good with lime tortilla chips.
