Introduction

Number of Servings: 6

Ingredients

    1 cup dry lentils
    1/2 cup brown rice
    3.5 cups water
    2 tbsp honey or agave syrup
    3 tbsp soy sauce
    2 tbsp olive oil
    1/4 cup sliced ginger chunks OR dry ginger to taste
    1 clove garlic
    1 medium onion
    2 sweet potatoes (or other autumn vegetable; acorn squash works well)
    black pepper to taste

Directions

This is a very easy one-pot recipe. Chop all vegetables and herbs, peel and cut the sweet potatoes into chunks. Place everything into a large oven-safe pot, cover and cook for 90 minutes at 350 degrees.

Makes 6 dinner-size servings, or more if a side dish.
