Introduction

Light and healthy lunch. Light and healthy lunch.
Number of Servings: 6

Ingredients

    1 package maifun noodles, soaked in hot water for 15 minutes
    .5 cup matchstick carrots
    2 cups broccoli florets
    2 cups shredded Napa Cabbage
    1 small can water chestnuts
    1 Tbsp soy sauce
    1 can vegetable broth
    1 Tbsp olive oil
    1 tsp cayenne pepper
    salt and pepper

Directions

While soaking the noodles, heat the olive oil and add the vegetables to a wok. Cook the vegetables until soft, adding some broth as needed. Add salt. pepper and cayenne to taste.

Drain the water from the noodles and add them to the cooked vegetables with the soy sauce and remaining broth. Heat through and serve. Makes 6 servings.
