Ingredients

    1/2 pountd Extra Lean ground beef (or substitute ground turkey BREAST, or soy-product meat substitute crumbles)
    Chopped onion 1/2 cup or to taste
    Green pepper 1 whole pepper cut up or to taste
    1 Tbsp reduced sodium taco seasoning
    1/4-1/2 cup water
    4 oz DRY rotini pasta (whole grain preferred)

Directions

Cook rotini pasta according to package directions. Omit salt if watching sodium intake.
Brown meat in non-stick skillet. Remove and set aside. Drain any fat. (Skip this step if using meat substitute.)
Cook pepper and onion until tender in same skillet.
Add taco seasoning and 1/4 cup water. Stir to combine with onion/pepper mix. Add cooked ground beef or meat substitute. Add more water as needed for a sauce.
Add cooked pasta and stir to combine and heat through. Top with shredded cheese and sour cream as desired. Serve with lettuce salad.
