Introduction

Ingredients

    2 C bisquick baking mix
    3/4 C oats
    2/3 C sugar
    1C mashed banana
    1/4 cup milk
    2 eggs
    1C fresh or frozen blueberries (thawed and drained). You can use raspberries if you don't mind the seeds.
    Makes 1 loafe or 24 slices .

Directions

Preheat oven to 350 F, Grease bottom of 9x5x3 loaf pan. Stir bisquick, oats, sugar, bananas, milk & eggs in large bowl until moitsteed. Beat vigorously 30 seconds. Gently Stir in blueberries. Pour into pan Bake 45-55 minutes until toothpick inserted in center comes out clean. Cool 10 minuetes in pan. Loosen loaf from sides of pan; remove from pan and palace top side of wire rack. Cool completely before slicing (about 2 hrs). Wrap tightly and store at room temperature up to 4 days or refrigerate up to 10 days.
High altitude: (3500-6500 fT) Heat ovne to 375 F Dercrease Bisquick to 1 3/4 C, surgar to 1/2 C bananas to 2/3 C Stir in 1/3 cup into bisquick. Increasae milk to 1/3 Cup and eggs to 3.
