Light, healthy, tasty and Filling too! Light, healthy, tasty and Filling too!
Number of Servings: 4

Ingredients


    1cup Whole Wheat Pancake mix, dry
    4 0z Yogurt, Dannon plain or vanilla, nonfat,
    1/4 Cup Applesauce, unsweetened,
    1 TB Splenda
    2 tsp Cinnamon, ground,
    1/2 C. Egg Beaters
    1/2 cup low fat Soy Milk-vanilla,
    1 tsp. pure vanilla extract


Directions

Mix all ingredients well, pour out on griddle. Cook on one side until dry on the outside and bubbly on the inside, then turn and cook until golden brown on other side. Serve with applesauce or other fruit, or sugar-free syrup.
For variety, I like to add blueberries or pecans. Makes 10 - 12 pancakes, about 4 servings of 3 - 4" pancakes each.
