Ingredients

    1 large onion, chopped
    1/2 small red bell pepper, chopped
    1 cup vegetable stock
    1 cup apple juice
    1/2 tsp of oregano
    1/2 tsp of ground cumin
    1/4 tsp cayenne pepper
    1 small can pickled green chilis
    2 cups black beans, drained and rinsed
    1 can tomato paste
    1/4 cup brown rice
    1/4 cup cilantro, minced

Directions

Saute the onions in a large saucepan over medium heat until translucent. Add the red peppers, saute for 2-3 more minutes. Add the stock, juice, oregano, cumin, cayenne and green chilies. Bring to a boil and then reduce heat. Simmer for 5 minutes. Stir in the beans, tomato paste and rice. Cover with lid and simmer for 15-20 minutes, or until the rice is cooked; stir occasionally to prevent sticking. Stir in the cilantro just prior to serving. Top each bowl of chili with some Tofutti or vegan "cheese" for garnish, if desired (not included in nutrition information). **Makes 2 large or 4 small servings**

    Incredible!
    YUMMO! VERY good. I didn't have veggie stock, so I added 1 1/2 cups juice and 1/2 cup water (and a pinch of salt) and a can of fire roasted tomatoes. REALLY good - hubby was 4 bites into it before he believed there was no meat!! I definitely recommend this one :) - 5/3/09
