Introduction

Ingredients

    2 cups diced potato
    2 oz shredded cheddar cheese
    1 tbsp butter
    1/4 cup Silk, plain
    1/4 tsp black pepper, or to taste
    1/2 tsp salt, or to taste

Directions

Boil the potatoes in water until soft, about 7 minutes on high. Lower heat under pan. Drain water. Add Silk, butter, pepper and salt. Mix together and cook another 2 minutes, gently mashing potatoes. Turn off heat. Add cheese and stir into potatoes.

Makes 4 1/2-cup servings.
