Ingredients

    1 packet of Kikkoman Sweet & Sour Sauce Mix
    1/2 block extra firm tofu, drained and pressed for 1 hour
    Extra virgin olive oil
    Vinegar - less than 1/4 cup
    3/4 cup water
    6 slices of cucumber
    6 slices carrot
    1 slice onion, cut into squares
    1/2 tomato coarsely chopped
    1/2 cup pineapple chunks
    Dried hot red jalapeno chiles to taste
    2 cups prepared brown rice

Directions

Dissolve the Kikkoman Sweet & Source sauce mix in 3/4 cup water and less than 1/4 cup vinegar. Set aside. Cut the tofu into 1/4" x 1" thick strips. Brown the tofu on low heat, coating the bottom of the fry pan generously with extra virgin olive oil. When the tofu is browned, add the sauce mixture, vegetables and chiles to taste. Scrape the tofu drippings from the bottom of the frying pan with a spatula and mix into the sauce. Bring to a boil, reduce heat and cover. Simmer on low heat for 10 minutes. Serve with brown rice. Makes 2 servings.
