Ingredients

12 oz skinless, boneless chicken breast strips
1/4 t garlic salt
1/8 t black pepper
nonstick cooking spray
2 c packaged broccoli slaw
1/2 t ground ginger
3T creamy peanut butter (I use reduced fat all natural)
1T reduced sodium soy sauce
1/2 t minced garlic
3 whole wheat tortillas ,warmed (use 10 ")
Directions
Sprinkle chicken strips with garlic salt & pepper. Lightly coat skillet with nonstick spray. Add chicken; cook over medium-high heat for 2-3 minutes, or until no longer pink. Remove from pan; keep warm. Add broccoli and 1/4 t of ground ginger to skillet. Cook & stir 2-3 minutes, until crisp-tender.
In a saucepan, combine peanut butter, 2T water, soy sauce, minced garlic and remaining ginger. Heat over low heat until smooth, whisking constantly.
To assemble spread warmed tortilla with peanut sauce. Top with chicken strips and vegetable mixture. Roll up each tortilla, secure with a toothpick. Cut in half;serve immediately.

Once I got the actual calorie count per serving (191) from the creator of this wonderful recipe, I couldn't wait to try it. It's really very good. I used lettuce to make the wraps the second time around and saved a few calories. I love the way the brocolli slaw was used. Great! Thanks Dragonfly! - 5/11/09
