Introduction

easy to make for on the go quick lunches at work. Ingredients

    I actually use Vigo brand yellow rice but it wasn't in the data base.

    black beans 1 can
    corn 1 can
    petite diced tomatos 1 can

Directions

I put in about 1 1/3 cup of rice and just a little less water than is required. I boil it till the rice has soaked up the water and then add all three cans without draining them. They will make up for the water I didn't put in at the beginning. I bring it to a boil again until the rice is nice and tender. Sometimes I add onions. I also season it with a little bit of paprika and garlic powder.
