    8 ozs of lamb chops, 1 inch thick
    1 tsp. lemon juice
    1 tsp oregano or tarragon
    1/2 tsp salt
    1/4 tsp black pepper
    1 lemon -- cut in wedges
    5 sprigs parsely


Prepare Lamb Chops - Brush one side of each lamb chop with lemon juice and sprinkle with oregano.
Broil the chops 6 to 8 minutes on one side. Season with salt and pepper then turn them over.
Brush the second side with lemon juice and sprinkle with oregano.
Broil for 6 to 8 minutes and then season with salt and pepper.
Place on platter and garnish with lemon wedges and parsley

    I saw another recipe like this that used Rosemary, freshly chopped in lieu of the Oregano. A different taste, but both are excellent and quick. - 1/15/08

  • I stopped eating lamb because I was sure it was high fat and somehow bad for you! SO happy I tried this recipe. The lamb came out tender with a little crisp round the edges and simple but flavourful. Lovely, thanks for sharing! I will definitely do this again. Very yummy AND healthy! - 7/17/09

  • I first sprayed the chops with olive oil then drizzled some lemon juice on them. I then did a dry rub with oregano, salt and pepper. They were placed a food saver container then marinated for a few hours. They were grilled per recipe and total yum when they were done. - 7/6/08
