Introduction

Number of Servings: 6

Ingredients

    3 medium sweet potatoes
    5 tbsp honey
    2 tbsp rum (vodka, scotch or cordial)
    1 tsp vanilla extract
    1/2 tsp cinnamon ground
    1/2 tsp ginger ground

Directions

Peel and cube sweet potatoes and boil until soft, about 20 minutes.

Blend sweet potatoes until smooth.

Press blended sweet potatoes through strainer to remove lumps or fiber strings.

Mix well strained sweet potatoes with rest of ingredients.

Spoon mixture into an 8x8 Pyrex pan, cover with plastic wrap and freeze for 4 hours.

After 4 hours remove from pan and blend mixture again.

Transfer mixture into a 3 cup Gladware container with lid. Freeze overnight.

Makes 6 1/2 cups servings.
