Introduction
Makes a great substitute for fries, oddly enough -- anything that goes with fries will go with this, including ketchup. Ingredients

Roughly 1/4 lb or 3/4 cup per serving

1/3 cup flour
1/2 tsp thyme
1/2 tsp marjoram
1/2 tsp black pepper
1/8 tsp (2-3 dashes) cayenne
1/4 tsp paprika
1/2 tsp salt
1 bay leaf, whole

1.5 lbs red potatoes

2 tsp butter, cut up
Directions
1---In a large mixing bowl, combine flour and spices, according to taste. Mix thoroughly.
2---Begin preheating oven to 450.
3---Wash and cube potatoes into rough 1" squares.
4---Add potatoes to flour and toss until all the cubes are coated.
5---Oil a 9"x13" baking dish. Pour potatoes into dish -- don't dump in the excess flour though. Spread potatoes out in dish.
6---Dot with cut up butter. Add bay leaf. Cover tightly with foil.
7---Bake 30 minutes. Remove foil, stir potatoes around, and continue baking (without foil) 10 more minutes or until fork tender.
