So good, and actually good for you. Strawberries can be substituted for whatever fruit you like! I got 12 regular muffins out of these plus 16 mini muffins. So good, and actually good for you. Number of Servings: 20

Ingredients

    2 cups fresh or frozen strawberries, cut into chunks
    1 egg
    1 cup milk
    1/4 cup oil
    1/2 cup applesauce
    2 1/2 cups whole wheat flour
    1 cup brown sugar
    1 cup quick oats
    1 tsp each cinnamon and baking soda
    1/2 tsp salt

Directions

Preheat oven to 350. grease 12 muffin cups or coat with cooking spray. Whisk wet ingredients together in a small bowl. Then in a large mixing bowl, using a fork, stir dry ingredients together. Make a well in the center. Pour in egg mixture and stir until just combined. Stir in strawberries.

Immediately spoon batter into muffin cups. Bake in centre of oven until a skewer inserted into centre of muffin comes out clean, from 30 to 35 minutes. Cool muffins in pan for 5 minutes, then remove to a cooling rack.
