To make this dish a little healthier I sprinkle the noodles over top to give it a bit of crunch but use fewer noodles. The edamame provides a lot of protein in this vegetarian dish. Ingredients

    Vegetable Broth, 1 cup
    Cornstarch 2 tablespoons
    Stir-fry Sauce, 2 tbsp
    Thai Chili Sauce, .25 tsp
    Olive or Canola Oil, 1 tbsp
    Garlic, 2 clove
    Frozen Stir Fry Vegetables 1 lb bag
    Bell Pepper, .5 pepper, sliced
    Edamame, frozen, 1.25 Cup
    Coleslaw mix 2.5 cup
    Bean sprouts, 1 can drained
    Chow Mein Noodles, 2 cup

Directions

In a small bowl mix together the broth, cornstarch, stir-fry sauce, and chili sauce. Set aside.

In a large deep skillet heat oil over medium high heat. Add garlic, frozen vegetables, frozen edamame, and bell pepper. Cook about 5 minutes, stirring frequently, until vegetables crisp tender. Drain pan if needed. Stir in coleslaw mix, bean sprouts, and sauce mixture. Cook, stirring constantly, until thickened. If desired serve over cooked rice. Sprinkle each serving with chow mein noodles.

Notes: This is a very flexible recipe. Use whatever stir fry sauce and frozen veggie mix that you desire. You could add or omit other veggies depending on what you like and have on hand.
