Introduction

These are low carb, low calorie breakfast muffins that I just love! You can do a meatless version with morningstar farms veggie sausage patties diced and added in place of ham.

Number of Servings: 12

Ingredients

    2 cups (=8 eggs) Egg Beaters egg sub.
    3 ounces of ham (finely diced)(Or 4 soy sausage patties)
    1 cup onions chopped
    1 cup mushrooms chopped
    .5 cup shredded cheddar cheese
    1 Tbsp olive oil


Directions

Saute the onions and mushrooms in the oil until they are soft. Let them cool about 2-3 minutes and mix all the ingredients into a large mixing bowl. Stir to combine and then, using a large spoon, fill muffin cups. Makes 12 muffins. If you use Veggie sausage patties, the calories content per muffin is increased to 64 calories per muffin.
In a muffin pan you will bake at 350 for 15-20 minutes, until the center is firm.

    Excellent - I would strongly suggest using paper cupcake liners - I'm having a rough time cleaning my pan and I did use Pam spray. I will make these again!!!! - 3/9/09

    I just made version of this using left over christmas ham. I make this every week for my on the go breakfast. I have a 1.5 hour commute and I reheat in the microwave for 45 seconds and eat two in the car. I use whatever is on hand for the filling. - 1/4/09
