Introduction

My mom made this for years, and I loved it as a kid. It comes out brownish because of the spices, is always super moist, and is DELICIOUS! This version calls for gluten-free flour, but regular flour may easily be substituted. My mom made this for years, and I loved it as a kid. Ingredients

    1 C Sugar
    1/2 C Shortening
    2 Eggs, separated
    2 C Flour - I use Bette Hagman's 4 Flour Bean Mix Blend
    1.2 tsp. Soda
    1/2 tsp. Cinnamon
    1/2 tsp. ground cloves
    3 Bananas, very ripe, mashed
    1/2 C Chopped nuts, almonds or pecans

Directions

Cream together the sugar, shortening, and egg yolks. Sift the dry ingredients together, and add to creamed mixture. (If making gluten-free, you may want to add 1 tsp. xanthan gum, but it's not necessary.) Stir in bananas and chopped nuts. (Notice, nutritional info is for almonds, although pecans are very tasty, too.) Lastly, fold in whites of the two eggs (beaten lightly), pour into loaf pan and bake at 350* until done. 1 loaf pan takes about 60 minutes. Test with toothpick to make sure the inside is done. It tastes best the next day after being baked.

Makes 21 1.5 oz (43 g) slices.

    I made this yesterday for a potluck today and it VANISHED! It was a huge hit, enjoyed by toddlers and adults alike. I made it with butter flavor Crisco, and added 1 tsp vanilla extract and about 1/2 tsp salt, and used regular flour and chopped walnuts. VERY YUMMY! - 6/28/09

    I totally forgot to rate this recipe when I commented on it awhile ago. It is the best! 3 thumbs up!!!!! I've made it twice in the past week. The cloves gives it a great taste along with the cinnamon. And what a great texture! This is the best banana bread! - 5/25/09
