A delightful gelatin salad made with pears and lime juice. A delightful gelatin salad made with pears and lime juice.
Number of Servings: 8

    1 packet unflavored gelatin
    1/3 cup lime juice
29 ounce can of juice packed pears
    1/3 cup sugar
8 ounces Neufchatel cheese, at room temperature
1/2 cup instant nonfat dry milk powder

In a small saucepan combine the unflavored gelatin and lime juice. Set aside for the gelatin to soften.

Drain the fluid from the pears into a glass measuring cup. Chop the pears and set them aside. Measure 2/3 cup of the pear fluid and pour it into the saucepan with the gelatin and lime juice. Add the sugar. Heat the mixture over a medium flame while stirring. Continue until the gelatin and sugar are dissolved. Set the gelatin aside.

Measure 1/2-cup of the pear liquid and pour it in a medium sized bowl. Place the bowl in the freezer. Chill until it has ice crystals forming around the edges.

Unwrap the neufchatel cheese and place it in a medium bowl. Pour any remaining pear juice over the cheese, approximately 2 to 3 tablespoons. Beat the cheese and pear juice until the cheese is very smooth. Pour in the gelatin mixture and mix well. Chill this mixture in the fridge until it thickens slightly, to the consistency of egg whites.

When the pear juice in the freezer has ice crystals forming around the edges take it out and sit it on the counter. Pour in the powdered milk. Using electric beaters whip the mixture until soft peaks form. This may take 5 to 7 minutes, depending on room temperature. Now gently pour the thickened gelatin mixture into the bowl with the whipped milk. Blend gently until everything is smooth. If desired you may add a few drops of green food coloring at this point.

Arrange the chopped pears in a 7 by 11-inch glass pan or a gelatin mold. Pour the gelatin mixture over the pears. Chill the mixture for 4 hours or overnight. Serve cold.

Makes 6 servings.
