Introduction
This is a good sauce to serve over Tuna Ricotta Loaf or over a meatloaf.. Ingredients

2 tsp olive oil
3 spring onions, sliced thinly (or 1/2 onion diced)
1 tsp garlic powder (or to taste)
1 teaspoon brown sugar
250g (about 5) roma tomatoes, cut in half
2 teaspoon balsamic vinegar
2 tsp Italian herb mix
salt and pepper, to taste
Directions
Preheat oven 180C (350F)
Line a flat baking sheet with foil, lay the tomato halves on, spray with oil and roast 15 - 20 mins until starting to brown.
Heat 2 tsp oil over a medium low heat. Add garlic , Italian herbs and spring onions and cook gently until softened. Stir in brown sugar and tomatoes, season with salt and pepper and the balsamic vinegar.
Cook for 5 minutes or until reduced and thickened
Check and adjust seasonings to taste.
Serve over Tuna Ricotta Loaf or a Meatloaf
