Ingredients

    2 cans black eyed peas, drained
    1 can whole kernal corn, drained
    1 can Rotel
    1 c. chopped red bell pepper
    1 c. chopped green bell pepper
    1 chopped jalepeno pepper
    1/2 c. chopped red onion
    1 lg jar pimentos

    Dressing:
    1/2 c. red wine vinegar
    1 Tbsp. balsamic vinegar
    1 tsp salt
    1/2 tsp blk pepper
    1 Tbsp Dijon mustard
    1/4 tsp sugar
    1/2 c. olive oil
    1/2 c. vegetable oil

    (Mix all veggies in bowl. Mix dressing in a jar and pour over veggies. Let chill in refrigerator until served.)

Directions

Makes about 10 cups.
