Introduction

I made this the other night, and it is great. My mom introduced it to us when she brought it over to us one night for dinner-she made with the canned beans, then when I made it I doctored it up a bit for a healthier kick. Ingredients

    1 lb ground turkey
    1 pakg taco seasoning-or see spark recipe
    1 can corn
    1 can petite diced tomatoes
    1 can tomato sauce
    1 can chili beans, or dry beans of your choice
    grated cheddar cheese
    spinach-optional
    cilantro-optional
    quinoa-optional
    onions-cooked with chili, or added as fixing
    corn tortillas
    salt
    cooking spray

Directions

Brown turkey-do not drain, add taco seasoning packet. add canned tomatoes, corn, and tomato sauce. Bring to boil, add beans-can use canned or dry-dry will take longer to cook. If cooking with dry beans, if using dry beans, add water for the beans to cook up. For dry beans, cook about two hours. I added cilantro, spinach, and quinoa to this recipe as well-just to give a healthier kick, but you don't need to. For canned beans, this will probably only take about 15 minutes to make. Serve with onions, cheese and sour cream if you like. I topped with cheese only-but you may like all the fixings. Can serve with tortilla ships, but I made my own by taking corn tortillas, cutting in fourths, spraying a baking sheet with cooking spray, and salting them, then baking at 300 for 20-30 minutes.
