Ingredients

    3 Calabacita (or zucchini) squash, sliced
    1 med. onion, sliced
    2 Roma Tomatoes, diced
    1 Jalapeno pepper, chopped fine (optional)
    3/4 c. Colby Jack Cheese, grated
    Salt, Pepper & Garlic, to taste

Directions

Saute squash, onion, pepper & garlic in skillet sprayed with cooking spray. Add tomato. Salt & pepper to taste. Pour mixture into baking dish sprayed with cooking spray. Top with grated cheese. Bake at 350 degrees until cheese is melted.
