Introduction

A great way to use up bananas you didn't get to eat during the week! This recipe can be modified to be lower fat by removing the nuts and/or sour cream. Ingredients

    Butter, salted, .5 cup
    Sugar, 1 cup
    White Flour, 1 cup
    Whole Wheat Flour, 1 cup
    Baking Soda, 1 tsp
    Baking Powder, 1.25 tsp
    Sour Cream, 5 tbsp
    Dried fruit such as apricots, .5 cup, chopped
    Pecans, .5 cup, chopped
    Banana, 2 medium
    Egg, 2 large

Directions

Preheat oven to 350 degrees.


Mash bananas and sour cream together. Mix in eggs. Set aside.


Combine sifted dry ingredients except sugar. Set aside.


Cream butter and sugar thoroughly.


Add banana mixture and dry ingredients to creamed mixture in thirds, alternating.


Fold in nuts and dried fruit.


Pour into greased baking pan, or into a muffin tin lined with paper. Bake at 350 degrees for 55 to 60 minutes for loaf, 30 minutes for muffins.


Makes 12 muffins, or 1 loaf (12 slices).
