Introduction

This is my family's favorite pasta recipe. Because of prep time, I often make the sauce the day beforehand or make the entire lasagna the night before and bake the next day. Ingredients

    1 lb. lean ground beef
    3/4 cup chopped onion
    2 tsp. oil
    16 oz. can of tomatoes
    2 6oz cans of tomato paste
    1 tsp. salt
    1 tsp. pepper
    1 tbsp. garlic powder
    1 tbsp. freshly chopped parsley
    1 tbsp. oregano
    8 oz. shredded low fat mozzarella cheese
    16 oz. riccota cheese
    1 cup of shredded parmesan cheese
    8 oz lasagna noodles

Directions

lightly brown ground beef and onion with a little oil in a large pot. Add tomatoes (if use whole tomatoes, break them into small pieces with spoon. I prefer to use diced tomatoes), tomato paste, salt, pepper, garlic powder, parsley and oregano and simmer over low heat for approximately 30 minutes, stirring occasionally.

Prepare the lasagna noodles, using 1/2 box. Drain and rinse so easy to handle.

In the bottom of a 13 x 9 x 2 pan, spread approximately 1 cup of sauce. Place a layer of noodles on top of the sauce, then layer with sauce, riccota, mozzarella and parmesan. Repeat the layers, ending with noodles, sauce, mozzarella and parmesan. Bake in 350 degree oven for approximately 40-50 minutes. Let stand for 10 minutes before cutting into 12 squares for serving. Serve with a garden salad for a complete meal. Enjoy!
