Mmm garlicy navy beans. This is a pretty simple dip I made with what I could find in my fridge.

I eat this stuff for lunch with some Neal Brothers or some guiltless gourmet corn chips and some salsa and veggies. It may yield more servings for you, especially if it's a snack? I just estimated how much of the recipe I like to eat.

Number of Servings: 3

Ingredients

    1 C navy beans
    half an onion, diced
    4 gloves garlic, pressed (or to taste)
    half a cup of chopped kale, not packed
    salt, to taste
    pepper, to taste
    lemon juice, to taste
    2 Tbsp tahini
    2 Tbsp or so water (or oil)

Directions

Saute the onion and garlic in canola or your preferred oil.

Dice the kale.

Toss everything but the beans into your food processor and give it a whirl. Then, while it's still going, add the beans bit by bit. Add a bit more water, or more oil, till you reach your desired consistency.

Makes about three servings, probably about 1/3 C per serving.

    Very Good
    This was delicious! I used leftover navy beans from dinner and olive oil. Also added cayenne because I like things a bit spicy. Also used spinach instead of kale because that's what I had. - 2/25/10
