Introduction

Ingredients

    1 T butter or soy margarine (for vegan version)
    1 T olive oil
    1 medium onion, chopped
    1 bell pepper, chopped
    8oz sliced button mushrooms
    2 cloves garlic, finely minced
    1 tsp vegetable broth concentrate or 1 bullion cube
    1/2 cup water
    2 15oz cans organic diced tomatoes
    1 6oz can tomato paste
    4 T white cooking wine
    1 1/2 tsp cinnamon
    1 1/2 tsp crushed red pepper
    2 tsp italian seasoning
    sea salt and freshly ground black pepper to taste
    1 large bunch of fresh basil, chopped

Directions

Heat oil and butter in medium, heavy-bottomed saute pot on medium high heat. Add onion, bell pepper and mushrooms and cook for about 5 minutes; add garlic, broth concentrate and water. Reduce heat to medium, add tomatoes, tomato paste, white wine and spices, continuing to cook for about 10 minutes. Season to taste. Just before serving, add basil and toss with pasta or gnocchi.
