Introduction

A family favorite! You can't pay me to eat "regular" fruit salad, but freeze it and I love it! The kids (and neighbors!) beg for this in the summer. Ingredients

    1 (17 oz.) can apricot halves
    1 (17 oz) can crushed pineapple
    1 C. juice from the above fruits
    1/2 C. sugar
    3 (10 oz) pkgs frozen strawberries, unthawed
    1 (6 oz.) can frozen orange juice concentrate
    2 Tbsp. lemon juice
    3 bananas, diced
    1 (12 oz) can ginger ale

Directions

(Makes approximately 48 1/3-cup servings.)

1) Drain apricots and pineapple, reserving liquid, and add water (if necessary) to make 1 cup.

2) Heat liquid and sugar in large pan until sugar dissolves.

3) Add strawberries and their juices, lemon juice, and orange juice concentrate.

4) Cut up apricots and add with bananas to the mixture.

5) Add pineapple and ginger ale.

6) Spoon into foil-lined muffin cups and freeze until solid.

7) Remove from tins when frozen and store in plastic bags in the freezer.

8) Remove from freezer 10-20 min. before serving.
